Stella of New Hope, the modern American restaurant helmed by seasoned executive chef Michael O’Halloran, is partnering with Barr Hill, a distiller-farm-apiary hybrid founded by a beekeeper and distiller based in Greensboro, Vermont, to celebrate Bee’s Knees Week — the largest sustainability initiative in the spirits industry — through Sunday, Oct. 2.
Bee’s Knees Week is an annual celebration of the Bee’s Knees cocktail, a Prohibition-era cocktail made with gin, lemon and honey syrup, and the importance of bees in our food and beverage system. Each year, restaurants and bars across the country come together in an effort to help these important insects.
According to Barr Hill, “Bees are responsible for one in every three bites of food we take, but their populations continue to struggle.” In 2019-20, over 40 percent of honeybee colonies in the U.S. were lost, according to Bee Informed. This Bee’s Knees Week, Barr Hill vows to plant 10 square-acres of new bee habitat for every Bee’s Knees cocktail shared on social media.
Stella of New Hope bar manager Jamie Shaw is offering a Bee’s Knees cocktail for $16 through Oct. 2. After ordering and before enjoying, guests should be sure to post a photo of the cocktail on social media and tag @barrhillgin and #beeskneesweek. The Stella Bee’s Knees features a honey syrup handmade with raw honey from Barr Hill, the same honey they use to make the gin.
